Hom Mali or Fragrant Rice

         The Famous Thai Jusmine Rice Jasmine rice is a long-grain variety of rice that has a nutty aroma and subtle flavor. Most households in Thailand consume this type of rice and is commonly found in supermarkets, the rice is mainly used for many types of rice dishes or plain white rice in Thailand.

The famous ' Jasmine rice ' is the "Khao Hom Mali" 105 variety (KDML105), discovered by Mr. Sunthorn Seehanern, a ministry of agriculture officer in Chachengsao province.

More About Rice

  • Brown Rice  belongs to the indica (logn-grain), similar to white rice. The only difference between these two varieties is the milling. As a result, in brown rice, only the husk is removed while the bran layer remains. Because of the bran layer, brown rice contains more nutrients than white rice. In particular, Brown rice is very high in fiber and vitamin B.
  • White Rice  belongs to the Indica (long-grain) category. It is also known as polished rice or fully milled rice because most of the outher layer-the husk and the bran layer-are removed from the kernel, through the milling process.
  • Broken Rice , during the milling process, broken rice is separated from the white rice, who shape remains intact. In other words, broken rice is the damaged white rice. A grain of broken rice gives a low fiber texture and low nutrient level, while retaining its high energy content.
  • Short Grain Rice  belongs to the Japonica (short-grain) category and has short, round, and plumpy dernel. When cooked, short-grained rice is stick together, although not as much as glutinous rice.In Japanese and Korean cuisine, short-grained rice is primary consumed in every meal.

         Thai Farmer - Ancestor's Method There are two main species of rice that is grown in Asia "Oryza Sativa" and the African "Oryza Glaberrima". The origin of rice is variously reported as having been first used in several places. One such reference places the origin of the first rice back 5,500 years to Thailand, where it is often absorption cooked, which allows the rice to take on the flavors the favors of foods cooked with it. In primitive cultures, the inedible outer husk is removed by pounding the whole grain in a bowl with a wooden spoon or such similar instrument.
         In Thailand, yields are quite high. One ear of rice provides about 200 grains. Previously it offered only about 100. In addition, the grains bombarded with chemical substances are thin and fragile. Tests conducted by the Department of Agriculture reveal that grains produced by organic farms are healthy and rich in nutrition.
